Elder flower Water Ice

I can't resist picking elder flowers and then at home I make cordials, champagne and this delicious water ice. They also dry very well. This recipe comes from Roger Phillips' Wild Food book.

Ingredients

In a heavy pan dissolve the sugar in the water and bring to the boil. Add the elder flowers tied in cheesecloth and boil for a few minutes. Remove pan from heat and cool. Remove the flowers and squeeze out excess liquid. Add the lemon juice and pour into a shallow freezing container. Put in the freezer and stir every hour or so until it is set in a nice grainy mixture. Soften for about half an hour in the fridge before serving.

Very refreshing light dessert on a hot summer day or after a heavy meal specially around Christmas.
